CHARMAT METHOD
The Charmat Method, also called Martinotti or Italiano, consists of a first fermentation of the must in steel containers, with a first filtration at the end of the process. The second fermentation takes place in an autoclave and after that, we obtain a spumante wine, with a variable sugar residue based on the choices of the winemaker. After the second fermentation and the maturation period, the spumante wine is microfiltered, in order to separate the yeasts and keep the wine perfectly clear in the bottle.
ANCESTRAL METHOD
The Ancestral Method recalls that set of techniques and ancient knowledge, carried forward by great-grandparents and ancestors, dating back to when Nature marked not only the times of the vines, but also those of the wine. The refermentation of the wine in the bottle takes place with its indigenous yeasts and sugars. At the end of the process, after some time of maturation, a sparkling wine is obtained, completely dry, with the natural yeasts still present in the bottle at the time of opening, which give a particular scent of bread crust, delicate and very pleasant.
